Green Beans with Garlic and Sun-Dried Tomatoes
One of my favourite clients, Mary Elizabeth gave me this recipe after buying my sun-dried tomatoes. Very pretty on the plate and how can you go wrong with beans, garlic, and sundried tomatoes. Winner Winner
INGREDIENTS:
- 1 lb Green Beans, Trimmed
- 2 Teaspoon Olive Oil
- 2 Garlic Cloves, Finely chopped
- 1/2 Teaspoon Soy Sauce
- 2 Teaspoon Sun-Dried Tomatoes, Soaked in water for twenty minutes and diced
- 1 Cup Water
- Sea Salt and Pepper to Taste
INSTRUCTIONS:
- Heat oil in a large skillet. Add garlic and tomatoes.
- Cook on low heat until very fragrant, about two minutes.
- Add beans and coat with garlic mixture.
- Add water and bring to boil.
- Cook, uncovered until water evaporates and beans are glazed with garlic mixture. This should take about 10 minutes or so.
- Stir occasionally and add salt and pepper to taste
- You can optionally add red pepper flakes
