Green Beans with Garlic and Sun-Dried Tomatoes

 

One of my favourite clients, Mary Elizabeth gave me this recipe after buying my sun-dried tomatoes. Very pretty on the plate and how can you go wrong with beans, garlic, and sundried tomatoes.  Winner Winner

 

INGREDIENTS:

  • 1 lb Green Beans, Trimmed
  • 2 Teaspoon Olive Oil
  • 2 Garlic Cloves, Finely chopped
  • 1/2 Teaspoon Soy Sauce
  • 2 Teaspoon Sun-Dried Tomatoes, Soaked in water for twenty minutes and diced
  • 1 Cup Water
  • Sea Salt and Pepper to Taste

 

INSTRUCTIONS:

  • Heat oil in a large skillet. Add garlic and tomatoes.
  • Cook on low heat until very fragrant, about two minutes.
  • Add beans and coat with garlic mixture.
  • Add water and bring to boil.
  • Cook, uncovered until water evaporates and beans are glazed with garlic mixture. This should take about 10 minutes or so.
  • Stir occasionally and add salt and pepper to taste
  • You can optionally add red pepper flakes
